I’ve made this a few times now, but for dinner. It’s VERY good, though I agree with a previous comment that it is not really a “hack,” but just an easy recipe. I add a few more eggs than what it calls for and double the hash browns so that it fits in a casserole dish. I probably go a little heavy on the other ingredients, too!

I wouldn’t stress about no TJs for this. They do have very reasonably priced pancetta, but any diced ham you like or bacon bit could sub in. And the big bag has browns they sell aren’t that unique. The headline feels more click hairy than real on this one, not that I care. Just saying go for it!

I’ve made this same recipe but with TJ’s soyrizo (soy chorizo) instead of pancetta for a vegetarian friendly breakfast!
